Recipes: Mairead's Seared Bass over Arugula with Goat Cheese
Here's the favorite recipe of the Captain's wife, Mairead! Always a crowd pleaser when you have guests.
Ingredients

Fillet of bass cut into portion sizes

Olive oil

Salt and pepper

Garlic powder

Arugula
-
Sweet Vidalia onion dressing

Roasted red peppers

Goat cheese

Cherry tomatoes
Cooking Instructions

Mix arugula with Vidalia onion dressing set aside in a bowl

Mix goat cheese with diced peppers and tomatoes with a bit of Vidalia dressing, mix together until creamy and set aside.

Salt and pepper and garlic powder each fillet and heat olive oil in skillet

When oil is hot pan sear the fish until cooked through, be sure to flip to cook both sides.

Place arugula on plate top with seared fish and spoon goat cheese mixture on top.
